Ingredients
By Measure
1/4 cup ground parmesan cheese
2 cups ground fried corn tortilla chips (use a food processer and process until the chips are ground to the same consistency as stone ground grits)
1 teaspoon minced garlic
1/2 teaspoon cumin
2 tablespoons melted butter
1 cup whole milk (will vary depending on corn chips) more if needed
Salt and pepper to taste
 


Preparation

  1. Combine all of the above ingredients in a bowl.
  2. Mix well.
  3. Allow to sit covered for 30 minutes. This will allow the liquids to soften the ground corn chips. The consistency will be similar to a potato pancake.
  4. Portion the dough into 2 1/2 inch rounds 1/2 inch thick.
  5. Preheat a sauté pan with olive oil to medium high heat. Use enough olive oil to coat the bottom of the sauté pan.
  6. Add the Arepa to the skillet.
  7. Cook on each side allowing them time to brown on each side. Do not rush this step. The browning will help the arepa stay together.
  8. Check for seasoning with salt and pepper.
  9. Use Arepas as you would tortilla or bread. They have the consistency of tamale.
