Ingredients
By Measure
1/4 cup ground parmesan cheese2 cups ground fried corn tortilla chips (use a food processer and process until the chips are ground to the same consistency as stone ground grits)
1 teaspoon minced garlic
1/2 teaspoon cumin
2 tablespoons melted butter
1 cup whole milk (will vary depending on corn chips) more if needed
Salt and pepper to taste
Preparation
- Combine all of the above ingredients in a bowl.
- Mix well.
- Allow to sit covered for 30 minutes. This will allow the liquids to soften the ground corn chips. The consistency will be similar to a potato pancake.
- Portion the dough into 2 1/2 inch rounds 1/2 inch thick.
- Preheat a sauté pan with olive oil to medium high heat. Use enough olive oil to coat the bottom of the sauté pan.
- Add the Arepa to the skillet.
- Cook on each side allowing them time to brown on each side. Do not rush this step. The browning will help the arepa stay together.
- Check for seasoning with salt and pepper.
- Use Arepas as you would tortilla or bread. They have the consistency of tamale.
