This chili recipe has been forwarded all over my family.
Ingredients
By Measure
16 oz. Kidney beans2 tablespoons olive oil
5 strips of bacon chopped
2 onions diced
4 cloves garlic
1 small green pepper diced
1 jalapeno diced
4 cups coffee
2 pounds canned diced plum tomatoes
1/2 cup salsa
4 tablespoons chili powder
1-tablespoon cumin
1-teaspoon turmeric
1-teaspoon oregano
1 1/2 pounds ground beef
Preparation
- Saute in oil the bacon until fully cooked then add the ground beef. Cook until done. Add the onions and peppers. Drain the excess grease. Add the spices. Toast spices in remaining oil. Add the remaining ingredients. Cook at a low simmer for 1 1/2 hours. If the chili becomes dry add chicken stock as needed.
- To thicken chili and add flavor combine 2 tablespoons masa de harina or corn meal and 3 tablespoons water. Make a paste. Stir into chili and allow to cook at a boil for 4-5 minutes. Season with salt and black pepper. Garnish with sour cream cheese, green onions, limes and corn chips
