Put it on a biscuit. Great! Toast. Great! On toasted, buttered brioche with some good blue cheese...Spectacular!

A new and different way to use tomatoes.
Ingredients
By Measure
6 lbs. of Tomatoes - Chopped Into 1" Pieces4 Cups Sugar
3" Cinnamon Stick
1 Orange
1" Piece of Fresh Ginger - Peeled
Preparation
- Chop the orange and ginger into small pieces then puree the entire orange and the ginger in a food processor.
- Add all the ingredients to a stainless steel pot and cook over medium heat until it thickens and turns a deep red color.
- Store in the refrigerator for up to two weeks or can and preserve according to manufacturer's instructions.

NOTES: Adjust the sweetness of the jam to your liking. If it's too sweet then squeeze some lemon juice in or add more tomatoes to make it right.
