Ingredients
By Measure
For The Cheese Sauce:2 tablespoons unsalted butter
1 teaspoon chopped garlic
2 tablespoons AP flour
2 cups milk
3/4 pound pepperjack cheese or a little over 2 cups shredded
Salt and pepper to taste
For The Meat:
1/2 pound fresh chorizo sausage
1/2 pound ground beef sirloin
1 jalapeno, seeded and diced small
2 teaspoons garlic, minced
1 small can black beans, drained and rinsed (around 1 1/2 cup)
1/2 cup fresh cilantro. chopped
1 yellow onion diced small
1 tablespoon olive oil
2 teaspoons ground cumin
1/2 teaspoon ground chipotle pepper
1/2 cup tomato sauce
Preparation
For The Cheese Sauce:
- In a small sauce pot melt the butter at medium heat. When the butter is hot add the garlic and saute for 20 seconds. Sprinkle the flour over the butter and garlic then stir making a roux. This will take just a few seconds. Add the milk to the mixture and cook while stirring until the mixture gently boils. The flour will not do its job as a thickener unless it boils. Be careful not to burn the bottom. Cook for 3 minutes. Reduce the heat to low then stir in the cheese. Mix until the cheese has melted into the sauce. Taste the sauce then season with salt and pepper. Keep warm.
- Start with a medium hot saute pan. Heat the olive oil then add the chorizo sausage. Cook the chorizo until fully cooked then add the onion. Cook the onion for 1 minute then add the ground beef sirloin. Cook the mixture until the beef is also fully cooked then add the jalapeno pepper, garlic and cumin. Stir together for 2 minutes then add the tomato sauce and black beans. Reduce the heat to a simmer and slow cook for 5 minutes. Adjust seasoning with salt and pepper. Right before serving add the fresh chopped cilantro folding it into the chorizo beef mixture.
- Start by making a bed of fried tortilla chips on a platter. Top the chips with the chorizo and beef mixture. Drizzle the cheese sauce over the chips and chorizo and beef mixture then garnish as you see fit.
