Moroccan Carrot Salad
A very flavorful salad on its own or paired with some meat marinated with the Moroccan Spice blend.

Ingredients
2 Cups Shredded Carrots
½ Cup Red Onion, Sliced Very Thin
2 Tbs Olive Oil
Juice from ½ a Lemon
¼ Cup Chopped Cilantro
1 Tbs Chopped Garlic
¼ tsp Cumin
1/8 tsp Cinnamon
½ tsp Paprika
½ tsp Harissa
Salt and Pepper To Taste
Preparation
- Mix all ingredients together and refrigerate overnight
- Season with salt and pepper before serving
- You can mix the carrots with a little lettuce mix to round it out or leave it as is
