Moroccan Carrot Salad


Ingredients
2 Cups Shredded Carrots
½ Cup Red Onion, Sliced Very Thin
2 Tbs Olive Oil
Juice from ½ a Lemon
¼ Cup Chopped Cilantro
1 Tbs Chopped Garlic
¼ tsp Cumin
1/8 tsp Cinnamon
½ tsp Paprika
½ tsp Harissa
Salt and Pepper To Taste
 
Preparation

  • Mix all ingredients together and refrigerate overnight
  • Season with salt and pepper before serving
  • You can mix the carrots with a little lettuce mix to round it out or leave it as is
