Corn Meal Pie Recipe

I first had cornmeal pie at a state park in Indiana. It's a lot like chess pie, which I love but with a twist. I went back and started working on the recipe immeidately.

Ingredients
By Measure
5 Large Egg Yolks
2 Large Whole Eggs
1/3 Cup Water
1 Tbs Cider Vinegar
2 Sticks Butter
2 Tbs Flour
2 Cups Sugar
1/2 tsp Salt
3/4 Cup Corn Meal

 
 


Preparation

  1. Melt the butter
  2. In a bowl using a stick blender or whisk combine the yolks, eggs, water, vinegar, flour, sugar, salt and corn meal
  3. Add the butter and mix well
  4. Pour into a tart or pie shell and bake at 350 degrees until done
