Something quick and easy for when the strawberries are ripe.
Ingredients
By Measure
1 egg1 cup milk
½ teaspoon vanilla extract
½ vanilla bean, using just the seeds inside the pod
1 tablespoon baking powder
½ teaspoon salt
1/3 cup sugar
2 cup flour
½ cup vegetable oil
Preparation
- Preheat oven to 400 degrees F
- Using a mixer beat the egg until frothy and becomes a light shade of yellow. It will also increase in size because of the air being incorporated.
- Add the oil, vanilla and mix well.
- Combine the dry ingredients. Mix the dry ingredients. Add the dry mixture into the wet mixture. Then add the milk. Mix gently until combined.
- Grease the muffin tins then fill of the way full.
- Bake at 400 degrees for 12-16 minutes or until golden brown.
- Allow to cool slightly then remove from the muffin pan and serve.
