Vanilla Muffins Recipe

1 egg
1 cup milk
½ teaspoon vanilla extract
½ vanilla bean, using just the seeds inside the pod
1 tablespoon baking powder
½ teaspoon salt
1/3 cup sugar
2 cup flour
½ cup vegetable oil
Preparation
Preheat oven to 400 degrees F
Using a mixer beat the egg until frothy and becomes a light shade of yellow. It will also increase in size because of the air being incorporated.
Add the oil, vanilla and mix well.
Combine the dry ingredients. Mix the dry ingredients. Add the dry mixture into the wet mixture. Then add the milk. Mix gently until combined.
Grease the muffin tins then fill of the way full.
Bake at 400 degrees for 12-16 minutes or until golden brown.
Allow to cool slightly then remove from the muffin pan and serve.
