1 Qt Milk
3 Qt Heavy Cream
4 Cups Sugar
3 Vanilla Beans
6 Cups of Egg Yolks



  1. Heat milk, heavy cream, sugar and vanilla bean(s) to a simmer
  2. Temper into egg yolks
  3. Heat mixture to 160 degrees
  4. Chill in an ice water bath
  5. When chilled, turn in an ice cream machine according to manufacturers directions
