Ingredients
By Weight
1 Qt Milk3 Qt Heavy Cream
4 Cups Sugar
3 Vanilla Beans
6 Cups of Egg Yolks
Preparation
- Heat milk, heavy cream, sugar and vanilla bean(s) to a simmer
- Temper into egg yolks
- Heat mixture to 160 degrees
- Chill in an ice water bath
- When chilled, turn in an ice cream machine according to manufacturers directions
