The General's Chicken Recipe
I pulled this from my old culinary school days. It's one of my favorites. Serve it with rice or noodles.

You'll find the General's chicken on every good Chinese buffet... well you better anyway. aka General Tso's chicken.
Ingredients
By Measure
The Sauce:1/2 Cup Corn Starch
1/4 Cup Water
2 Tbs Minced Ginger
2 Tbs Minced Garlic
3/4 Cup Sugar
1/2 Cup Soy Sauce
1/4 Cup White Wine
1/2 Cup Rice Wine Vinegar
1 1/2 Cups Chicken Stock
The Chicken:
3 lbs Chicken Breast Cut Into 1 Pieces
1/4 Cup Soy Sauce
1 Egg
3/4 Cup Corn Starch
1/4 Cup Flour
Oil For Frying
Vegetables and Garnish:
1 Cup Julienned Carrots
1 Cup Julienned Onions or Leeks
1 Cup Julienned Red Bell Peppers
2 Cup Sliced Green Onions
12 Small, Dried Chili Peppers
Preparation
For The Sauce:
For The Chicken:
To Finish:
- Mix all the sauce ingredients together in a bowl and set aside.
For The Chicken:
- Mix the soy sauce and egg together and coat the chicken well.
- Mix the corn starch and flour together and toss the chicken in it making sure it is coated well.
- Deep fry the chicken in batches in 350 degree oil until browned and cooked through.
- Set the finished chicken in a 200 degree oven until needed
To Finish:
- In a large wok or sauti pan cook the carrots, onions or leeks and bell peppers in very hot oil for 2 minutes.
- Add the dried chilis and cook for 2 more minutes
- Add the sauce and cook until it simmers and thickens
- Add the chicken and toss until well combined
- Garnish with the green onions and serve with rice
