Sweet Potato Cake with Sautéed Pears, Candied Walnuts and Blue Cheese Recipe
I love sweet potatoes. They take me back to my childhood and my grandpa. So any recipe with sweet potatoes is good to me.

By Measure
For The Cake:
2 Sticks Butter - Softened
1 Cup Sugar
1 1/2 Cups Sweet Potatoes - Canned or Roasted with Skins Removed and Mashed
1/2 Cup Molasses
3 Eggs
2 1/4 Cups AP Flour
1/2 tsp Salt
1/2 tsp Allspice
1/2 tsp Ginger
1 tsp Cinnamon
1 Cup Hot Water
2 tsp Baking Soda
For The Pears:
4 Pears - Peeled, cored and diced into 1/4 inch pieces
2 Tbs Butter
1/2 Cup Sugar
2 Sticks Butter - Softened

2 tsp Baking Soda
For The Pears:
4 Pears - Peeled, cored and diced into 1/4 inch pieces
2 Tbs Butter
1/2 Cup Sugar
Preparation
For The Cake:
NOTE - If your batter is thin it's OK.
For The Pears:
Assembly:
- In the bow of an electric mixer mix together the butter, sugar and sweet potatoes until well blended
- Add the molasses and eggs and mix until combined
- Stir together the flour, salt, allspice, ginger and cinnamon and mix with the butter mixture until combined
- Dissolve the baking soda in the hot water then add to mix and mix well
- Bake in a cake pan or two bread loaf pans at 350 degrees until a toothpick inserted comes out clean . Start checking at 30 minutes
- Cool before serving
NOTE - If your batter is thin it's OK.
For The Pears:
- Sauti the pears in the butter over medium heat until soft
- Add the sugar and cook until liquid from pears is syrupy
Assembly:
- Place a piece of cake on a plate. Spoon a little of the sautied pears over the top. Garnish with some candied walnuts and some crumbled gorgonzola or your favorite blue cheese.
