Sweet Potato Cake with Sautéed Pears, Candied Walnuts and Blue Cheese Recipe


Ingredients
By Measure
 
For The Cake:
2 Sticks Butter - Softened
1 Cup Sugar
1 1/2 Cups Sweet Potatoes - Canned or Roasted with Skins Removed and Mashed
1/2 Cup Molasses
3 Eggs
2 1/4 Cups AP Flour
1/2 tsp Salt
1/2 tsp Allspice
1/2 tsp Ginger
1 tsp Cinnamon
1 Cup Hot Water
2 tsp Baking Soda

For The Pears:
4 Pears - Peeled, cored and diced into 1/4 inch pieces
2 Tbs Butter
1/2 Cup Sugar

 
 
Preparation

For The Cake:
  1. In the bow of an electric mixer mix together the butter, sugar and sweet potatoes until well blended
  2. Add the molasses and eggs and mix until combined
  3. Stir together the flour, salt, allspice, ginger and cinnamon and mix with the butter mixture until combined
  4. Dissolve the baking soda in the hot water then add to mix and mix well
  5. Bake in a cake pan or two bread loaf pans at 350 degrees until a toothpick inserted comes out clean . Start checking at 30 minutes
  6. Cool before serving

NOTE - If your batter is thin it's OK.

For The Pears:
  1. Sauti the pears in the butter over medium heat until soft
  2. Add the sugar and cook until liquid from pears is syrupy

Assembly:
  1. Place a piece of cake on a plate. Spoon a little of the sautied pears over the top. Garnish with some candied walnuts and some crumbled gorgonzola or your favorite blue cheese.
