Spicy Sage Croutons Recipe
I like to add some crisp lardoons of bacon or pancetta and some chopped chives to this mixture.

A spicy crouton that's a great garnish for many different recipes.
Ingredients
By Measure
3/4 Cup Oil6 Sage Leaves
1/2 tsp Chopped Garlic
2 Tbs Chopped Onions
1/4 tsp Cayenne Pepper
4 Cups Bread Diced Into 1/4 inch Cubes
Salt & Pepper To Taste
Preparation
- In a blender combine oil, sage leaves, garlic, onions and cayenne and blend well
- Season with salt and pepper
- In a large saute pan heat the oil mixture over medium-high heat until hot then add the diced bread
- Cook until bread is toasted and crispy, stirring often
- The bread will probably soak up most if not all of the oil mixture, that's ok, just continue to let it cook and it will crisp nicely
