Crackers: Who knew they could be this easy?
Ingredients

Yield 50-60, 1.5 inch square crackers4 cups all purpose flour
1 cup unsalted butter, room temp
3/4 teaspoon baking soda
3/4 cup buttermilk or whole milk
1 teaspoon salt
1 Tablespoon apple cider vinegar
Preparation
- Using the back of a fork cut the butter into the flour. Work the butter and flour together until it resembles corn meal.
- Combine the flour and butter mixture with the salt and baking soda. Mix with a whisk to combine.
- Add the buttermilk and vinegar to the flour mixture then mix to combine. Keep the period of mixing short. Just mix enough to pull it together.
- Cut the dough into 4 pieces. Roll out each dough into thin sheets on a floured surface. Roll the sheets as thin as you can go. 1/8 of an inch is very good. Dock the dough with a fork and cut into shapes. Place the shapes on parchment paper and bake in a preheated oven at 375 degrees for 9-11 minutes. Do not over bake. The cracker should have just a little browning. Allow crackers to cool.
- Serve or keep in a tin or airtight container for 1-2 days.
