Soda Crackers Recipe

Yield 50-60, 1.5 inch square crackers
4 cups all purpose flour
1 cup unsalted butter, room temp
3/4 teaspoon baking soda
3/4 cup buttermilk or whole milk
1 teaspoon salt
1 Tablespoon apple cider vinegar
 
Preparation

  1. Using the back of a fork cut the butter into the flour. Work the butter and flour together until it resembles corn meal.
  2. Combine the flour and butter mixture with the salt and baking soda. Mix with a whisk to combine.
  3. Add the buttermilk and vinegar to the flour mixture then mix to combine. Keep the period of mixing short. Just mix enough to pull it together.
  4. Cut the dough into 4 pieces. Roll out each dough into thin sheets on a floured surface. Roll the sheets as thin as you can go. 1/8 of an inch is very good. Dock the dough with a fork and cut into shapes. Place the shapes on parchment paper and bake in a preheated oven at 375 degrees for 9-11 minutes. Do not over bake. The cracker should have just a little browning. Allow crackers to cool.
  5. Serve or keep in a tin or airtight container for 1-2 days.
