Rice Pudding Recipe
This recipe has several of my favorite holiday ingredients: Pistachios, oranges and vanilla.

Ingredients
By Measure
2 cups cooked basmati ricepinch of salt
3 cups heavy whipping cream
1 1/2 cups coconut milk
2/3 cup raw cane sugar
1/2 teaspoon ground cardamom
1/2 cup raisins
Orange zest from 1/2 orange
1/2 teaspoon vanilla extract
Chopped pistachios for garnish
Preparation
- Combine the cooked basmati rice, ground cardamom and heavy whipping cream.
- Bring the mixture to a boil then reduce to a simmer stirring often being careful not to scorch.
- Add the remaining ingredients and cook while stirring often until the rice mixture begins to thicken.
- Serve refrigerated or at room temperature.
