Rice Pudding Recipe


Ingredients
By Measure
2 cups cooked basmati rice
pinch of salt
3 cups heavy whipping cream
1 1/2 cups coconut milk
2/3 cup raw cane sugar
1/2 teaspoon ground cardamom
1/2 cup raisins
Orange zest from 1/2 orange
1/2 teaspoon vanilla extract
Chopped pistachios for garnish

 
 
Preparation

  1. Combine the cooked basmati rice, ground cardamom and heavy whipping cream.
  2. Bring the mixture to a boil then reduce to a simmer stirring often being careful not to scorch.
  3. Add the remaining ingredients and cook while stirring often until the rice mixture begins to thicken.
  4. Serve refrigerated or at room temperature.
