Potato Chips Recipe
I know the recipe calls for 2 potatoes but let's be honest here, that just isn't going to cut it. Use as many as you want.

Ingredients
By Measure
4 Cups Peanut Oil2 Large Potatoes - Russet, Peruvian, Yukon Gold, Sweet, etc.
Salt
Dried herbs and/or spices (optional)
Preparation
- Using a mandolin carefully slice the potatoes paper thin
- Bring oil to 325 degrees over medium-high heat
- Cook a few slices at a time so the oil doesn't cool down too much
- Once chips are cooked and there is very little popping noise remove to a paper towel lined bowl
- Season with the salt and herbs and spices if using
- Allow oil to return to 325 before cooking another batch
