Potato Chips Recipe


Ingredients
By Measure
4 Cups Peanut Oil
2 Large Potatoes - Russet, Peruvian, Yukon Gold, Sweet, etc.
Salt
Dried herbs and/or spices (optional)
 
Preparation

  1. Using a mandolin carefully slice the potatoes paper thin
  2. Bring oil to 325 degrees over medium-high heat
  3. Cook a few slices at a time so the oil doesn't cool down too much
  4. Once chips are cooked and there is very little popping noise remove to a paper towel lined bowl
  5. Season with the salt and herbs and spices if using
  6. Allow oil to return to 325 before cooking another batch
NOTE: You can use more oil in a larger pot. This will allow for cooking more chips at once and will also maintain temperature more easily.
