Homemade pastrami is as easy as adding seasoning and hot smoke to a corned beef brisket.
Ingredients
2 uncooked corned beef brisket 2-3 pounds each
For the rub:
4 tablespoons fresh coarsely ground black pepper
2 tablespoons coriander powder
1 teaspoon mustard powder
1 tablespoon brown sugar
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons onion powder
Preparation
Combine the rub in a bowl then rub the corned beef. You may not need it all. Be liberal.
You must have a smoker for this step. Smoke the beef at medium-low heat until the beef reaches 150 degrees F. At this point wrap the beef with foil. Continue to cook until the beef reaches 203-205 degrees. Let it rest for 15 minutes. Slice and serve.
