Ingredients

2 Sticks Butter - Softened1 1/2 Cups Sugar
1 1/2 Cups Brown Sugar - Packed Firm
4 Eggs
2 tsp Vanilla
2 1/2 Cups AP or Bread Flour
1 tsp Baking Soda
1 Tbs Cinnamon
1/2 tsp Salt
5 1/2 Cups Oats
2 Cups Dried Cranberries
2 Cups Pecans - Toasted and Chopped
Preparation
- In the bowl of an electric mixer cream the butter with the sugars until light
- Add the eggs one at a time and mix well
- Add the vanilla and mix well
- Stir together the flour, baking soda, cinnamon and salt and stir into mixture
- When it all comes together add the oats, cranberries and pecans and mix until well combined.
- Scoop and bake at 400 degrees until lightly browned (10-12 minutes)
- Makes about 4-5 dozen cookies depending how big your scoop is
