Oatmeal Cranberry & Pecan Cookies Recipe


Ingredients
By Measure
2 Sticks Butter - Softened
1 1/2 Cups Sugar
1 1/2 Cups Brown Sugar - Packed Firm
4 Eggs
2 tsp Vanilla
2 1/2 Cups AP or Bread Flour
1 tsp Baking Soda
1 Tbs Cinnamon
1/2 tsp Salt
5 1/2 Cups Oats
2 Cups Dried Cranberries
2 Cups Pecans - Toasted and Chopped

 
 
Preparation

  1. In the bowl of an electric mixer cream the butter with the sugars until light
  2. Add the eggs one at a time and mix well
  3. Add the vanilla and mix well
  4. Stir together the flour, baking soda, cinnamon and salt and stir into mixture
  5. When it all comes together add the oats, cranberries and pecans and mix until well combined.
  6. Scoop and bake at 400 degrees until lightly browned (10-12 minutes)
  7. Makes about 4-5 dozen cookies depending how big your scoop is
