Oatmeal and Bacon Cookies with Maple Glaze Recipe

Ingredients
By Measure
1/2# Bacon
1 Stick Unsalted Butter-Softened
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Egg
1/2 tsp Vanilla
1 Cup Flour
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
1 1/2 Cups Oats
For The Glaze:
1 Cup Powdered Sugar
2 Tbs Maple Syrup
Milk to thin to desired consistency for glazing
Preparation
- Chop the bacon into 1/4-inch pieces and render over medium-high heat stirring often until the bacon is very crispy
- Drain and allow to cool
- In a mixer with a paddle attachment cream the butter and sugars until creamy
- Add the egg and vanilla and mix until well combined
- Stir together the flour, baking soda, salt and cinnamon and add to the wet mixture
- Mix well then add the oats and bacon and mix until combined
- Scoop onto a greased or parchment lined cookie sheet
- Bake at 400 degrees for 10-11 minutes until cookies are browned
- Remove from the oven and tap the tray on a hard surface so the cookies with deflate
- Allow cookies to cool for 6-8 minutes before applying the glaze
- Mix together the ingredients for the glaze until consistency is thick but pourable
- Drizzle glaze over cookies and enjoy
- Makes about 20 cookies
