Oatmeal and Bacon Cookies with Maple Glaze Recipe


Ingredients
By Measure
 
For The Cookies:
1/2# Bacon
1 Stick Unsalted Butter-Softened
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Egg
1/2 tsp Vanilla
1 Cup Flour
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
1 1/2 Cups Oats

For The Glaze:
1 Cup Powdered Sugar
2 Tbs Maple Syrup
Milk to thin to desired consistency for glazing

 
 
Preparation

  1. Chop the bacon into 1/4-inch pieces and render over medium-high heat stirring often until the bacon is very crispy
  2. Drain and allow to cool
  3. In a mixer with a paddle attachment cream the butter and sugars until creamy
  4. Add the egg and vanilla and mix until well combined
  5. Stir together the flour, baking soda, salt and cinnamon and add to the wet mixture
  6. Mix well then add the oats and bacon and mix until combined
  7. Scoop onto a greased or parchment lined cookie sheet
  8. Bake at 400 degrees for 10-11 minutes until cookies are browned
  9. Remove from the oven and tap the tray on a hard surface so the cookies with deflate
  10. Allow cookies to cool for 6-8 minutes before applying the glaze
  11. Mix together the ingredients for the glaze until consistency is thick but pourable
  12. Drizzle glaze over cookies and enjoy
  13. Makes about 20 cookies
