No Bake Cookies Recipe
What's with no bake cookies? I grew up loving them and also eating a lot of bad ones. Some were too chewy or too crumbly. Some were hard as rocks or like chocolate oat taffy. I finally got it right when I threw the boiling time out the window and went to the more precise temperature. Works every time.

Ingredients
By Measure
1 3/4 Cup Sugar1/2 Cup Milk
1 Stick Butter
1/4 Cup Cocoa
1/2 Cup Crunchy Peanut Butter
3 Cups Quick Oats
1 tsp Vanilla
Preparation
- In a sauce pan over medium-high heat bring the sugar, milk, butter and cocoa to 230 degrees on a candy thermometer
- Remove from the heat and stir in peanut butter, oats and vanilla
- Scoop onto waxed paper into desired cookie sizes
- Allow to cool to room temperature
- NOTE: I like to scoop my cookies using a #30 scoop. This yields about 22 cookies. You should easily be able to get 18-24 cookies out of this recipe.
