Lemon Curd
My favorite lemon curd recipe I've ever used.

Ingredients
Zest of Three Lemons
1 ¾ Cup Sugar
1 Stick Softened Butter
5 Large Eggs
½ Cup Lemon Juice
Preparation
1. In a food processor blend the lemon zest and sugar
2. Add the butter and blend until incorporated
3. Add the eggs and lemon juice and blend until smooth
4. Cook in a sauce pan over medium heat until thick
5. Stir continuously so it doesn’t scorch
6. Cool in an ice bath and use or store
