Ingredients
By Measure
1# Flat Iron Steak or Ribeye Steak Sliced Very Thin Into 1 1/2" Long Pieces1/2 Cup Corn Starch
3 Tbs Fajita Seasoning
3 Tbs Smoked Paprika or Regular Paprika
4 6" Corn or Flour Tortillas Cut Into 8 Wedges Each
1 Ripe Avocado
1 tsp Minced Garlic
1 Lime
1/2 Cup Red Onion Sliced Very Thin
1/2 Cup Cilantro Chopped Fine
1 Tbs Oil
Salt and Pepper To Taste
Preparation
- Toss the sliced beef with the corn starch until well coated
- Fry in a deep fryer in 350 degree oil until crispy then toss with the fajita seasoning and the smoked paprika and season with salt and pepper then set aside
- Fry the tortilla wedges until crispy and set aside
- Make a basic guacamole by peeling and mashing the avocado with the garlic and the juice and zest from 1/2 of the lime and season with salt and pepper then set aside
- Mix together the red onion, cilantro, juice from 1/2 the lime and oil and season with salt and pepper then set aside
- Place a small amount of the guacamole on each fried tortilla chip
- Top with a piece of the seasoned, crispy beef
- Garnish with the red onion and cilantro "salad"
