A classic Thanksgiving giblet gravy.
Ingredients
By Measure
2 Tbs OilGiblets From Your Turkey
Neck From Your Turkey
1/2 Cup Diced Onion
1/2 Cup Diced Celery
3 Tbs Butter
2 Tbs Flour
2 1/2 Cups Chicken or Turkey Stock
Salt & Pepper To Taste
Preparation
- In a sauce pan over high heat bring the oil to just smoking then add the giblets and neck
- Cook these until caramelized then add the onions and celery and cook until soft
- Add the butter and when it is melted add the flour then stir until combined to make a roux (about 30 seconds so we don't burn the roux)
- Add the chicken or turkey stock and bring to a simmer
- When the gravy is thickened and can coat the back of a spoon season with salt and pepper
- At this point remove the neck and giblets and serve or you can remove the neck and puree the giblets into the gravy for more flavor
