Giblet Gravy Recipe


Ingredients
By Measure
2 Tbs Oil
Giblets From Your Turkey
Neck From Your Turkey
1/2 Cup Diced Onion
1/2 Cup Diced Celery
3 Tbs Butter
2 Tbs Flour
2 1/2 Cups Chicken or Turkey Stock
Salt & Pepper To Taste

 
 
Preparation

  1. In a sauce pan over high heat bring the oil to just smoking then add the giblets and neck
  2. Cook these until caramelized then add the onions and celery and cook until soft
  3. Add the butter and when it is melted add the flour then stir until combined to make a roux (about 30 seconds so we don't burn the roux)
  4. Add the chicken or turkey stock and bring to a simmer
  5. When the gravy is thickened and can coat the back of a spoon season with salt and pepper
  6. At this point remove the neck and giblets and serve or you can remove the neck and puree the giblets into the gravy for more flavor
