4 cups day old cooked basmati rice that has been refrigerated1/2 cup thin sliced yellow onion
1/2 cup diced ham
1 tablespoon garlic
2 teaspoon dark soy
1 tablespoon soy
1 teaspoon ginger
1/4 cup frozen peas
2 teaspoon sesame oil
2 tablespoon corn oil
2 eggs scrambled, (fully cooked in a separate skillet)
1 tablespoon fresh cilantro
a big pinch ground black pepper
salt to taste
Preparation
- In a hot wok or skillet add the corn oil. When the oil is hot add the ham.
- Cook the ham for 30 seconds. Add the onion and continue to cook at high heat for 2 minutes.
- Next, add the ginger, garlic and peas. Cook for 30 seconds then stir in the rice. Cook until rice is well coated and hot.
- Add all the remaining ingredients and stir-fry until all the seasoning is well distributed. Adjust seasoning with salt and pepper.
