Cauliflower Puree Recipe
Use this puree as you would hummus. Great on toasted bread or crackers, raw vegetables or as a spread on sandwiches.

A new way to use an often overlooked vegetable.
Ingredients
By Measure
1 Head Cauliflower Cut Into Florets5 Garlic Cloves - Whole
2 Medium Shallots - Chopped
1 Quart Milk
1 tsp Yellow Curry
Salt and Pepper to Taste
Preparation
- In a sauce pot bring all the ingredients to a simmer over medium-high heat
- Once the cauliflower is soft strain the milk off and reserve
- Add the drained ingredients to a food processor and puree until smooth
- If the mixture is too thick add a little of the reserved milk to thin
- Great as a dip for vegetables or as a spread for sandwiches
- Makes about 3 cups puree
