Butternut Squash and Sweet Potato Soup Recipe
I am not a big soup eater, but when I do, I want it to be a hearty soup. Chili. Gumbo. This soup. You can garnish with the Spicy Sage Croutons for a little texture and more flavor.

A hearty soup that's great for fall and winter.
Ingredients
By Measure
4 Tbs Butter2 Diced Sausage Patties
4 Cup Diced Butternut Squash
2 Cups Diced Sweet Potatoes
1 Cup Diced Yellow Onion
1 Granny Smith Apple - Diced
3 Sage Leaves
1 Quart Chicken Stock
1 Cup Grated Aged Cheddar (optional)
Salt and Pepper To Taste
Preparation
- In a stock pot over medium-high heat add the butter and when it is melted add the sausage and cook until about half cooked
- Add the squash, sweet potatoes, onion and apple and cook until soft
- Add the sage and chicken stock and bring to a simmer
- Simmer for 5 minutes then take off the heat and puree until smooth
- Add the cheese if using and stir until melted
- Season to taste with salt and pepper
- Makes about 2 quarts of soup
