Butternut Squash and Sweet Potato Soup Recipe


Ingredients
By Measure
4 Tbs Butter
2 Diced Sausage Patties
4 Cup Diced Butternut Squash
2 Cups Diced Sweet Potatoes
1 Cup Diced Yellow Onion
1 Granny Smith Apple - Diced
3 Sage Leaves
1 Quart Chicken Stock
1 Cup Grated Aged Cheddar (optional)
Salt and Pepper To Taste
 
Preparation

  1. In a stock pot over medium-high heat add the butter and when it is melted add the sausage and cook until about half cooked
  2. Add the squash, sweet potatoes, onion and apple and cook until soft
  3. Add the sage and chicken stock and bring to a simmer
  4. Simmer for 5 minutes then take off the heat and puree until smooth
  5. Add the cheese if using and stir until melted
  6. Season to taste with salt and pepper
  7. Makes about 2 quarts of soup
