Dacquoise Recipe


Ingredients
By Measure
2 Cups Nuts
3 Cups Confectioners Sugar
1 Cup Egg Whites
1/3 Cup Sugar
By Weight
8 oz Nuts: Powdered
1 Confectioners Sugar
8 oz Egg Whites
3 oz Granulated Sugar

 
 
Preparation

  1. Be sure the nuts you use are toasted and very finely ground.
  2. Mix the ground nuts with the confectioners sugar.
  3. Whip the whites to soft peaks then add the granulated sugar.
  4. Whip to stiff, shiny peaks then gently fold in the nut mixture in 4 increments.
  5. Pipe onto parchment into desired shapes.
  6. For small rounds bake at 325 degrees for about 15 minutes until brown.
  7. Let cool then use or freeze.
