Buttermilk Ice Cream Recipe

1 Quarts Buttermilk
1 Quarts Cream
3 Cups Sugar
1 Vanilla Bean
2 Cups Egg Yolks
 
By Weight
1 Qt Buttermilk
1 Qt Heavy Cream
3 Cups Sugar
1 Vanilla Bean
1 Egg Yolks

 
 
Preparation

  1. Heat buttermilk, heavy cream, sugar and vanilla beans to a simmer
  2. Temper into egg yolks
  3. Heat mixture to 160 degrees
  4. Chill in an ice water bath
  5. When chilled, turn in an ice cream machine according to manufacturers directions
