1 Quarts Cream
3 Cups Sugar
1 Vanilla Bean
2 Cups Egg Yolks
By Weight
1 Qt Buttermilk
1 Qt Heavy Cream
3 Cups Sugar
1 Vanilla Bean
1 Egg Yolks
Preparation

Heat buttermilk, heavy cream, sugar and vanilla beans to a simmer

Temper into egg yolks

Heat mixture to 160 degrees

Chill in an ice water bath

When chilled, turn in an ice cream machine according to manufacturers directions
