What We Liked This Week

Having some fun with our pizza oven and got in a few ingredients to play with.  Our favorite has got to be the Spanish chorizo…we’re on our second one already.  Mexican chorizo is a delicious sausage full of spices and not lacking in flavor in the least.  It’s typically a fresh style of sausage much like breakfast sausage so it must be cooked before using.  Spanish chorizo however is typically cured like a salami or pepperoni and can be smoked or not smoked.  My experience with Spanish chorizo is that it typically has quite a bit less seasoning that its Mexican cousin but both are equally delicious.  Use Spanish chorizo just like you would pepperoni on a pizza or in a sandwich or just sliced and eaten as is.  All delicious.
