Fried Sage
By Chef Brian
So there are all sorts of garnishes to use for meat but one of our favorites that takes people by surprise is fried sage. It’s a simple garnish to make. All you need is some fresh sage and enough oil to deep fry it in. Bring the oil to 350 degrees and drop the sage in. Make sure it is submerged and let it fry for 30-40 seconds. Remove it and season with salt and pepper. It’s a great and tasty garnish for roasted or grilled meat. You can fry just the leaves or you can fry bigger pieces of stem and leaves. It’s all edible and delicious.
