Ingredients

1/4 Cup Butter:Melted1/4 Cup Vegetable Oil
1 Cup Brown Sugar
1 1/2 Cups Flour: AP
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
1 Eggs
1 Cup Zucchini
1/2 Cup Buttermilk: If Needed
1/2 Cup Walnuts: Optional
Preparation
- Preheat oven to 350 degrees
- Shred the zucchini
- Combine butter, oil and sugar and mix until smooth
- Add the egg and mix until incorporated
- Sift the flour, baking soda, baking powder and salt
- Add sifted ingredients to creamed mixture a little at a time until it is all incorporated and the batter is smooth
- If batter is too stiff, add buttermilk to bring to a cake batter consistency
- Squeeze excess water from zucchini and fold into batter along with walnuts if using
- Bake for 1 hour or until a toothpick inserted in the center comes out clean
