Ingredients

1 cup unsalted butter3/4 cup sugar
2 teaspoons vanilla extract
1 teaspoon almond extract
2-1/2 cups AP flour
1-ounce jam
Preparation
- Cream the butter in the mixer until light and fluffy.
- Add all the remaining ingredients except for the jam and mix until a soft dough pulls together. Scrap the bowl several times during this process. It will seem dry in the beginning. Give it time to come together.
- Wrap the dough in plastic wrap then refrigerate for 1 hour.
- Section the dough and roll into 3/4 inch balls. Place the balls on aluminum foil, which is on a sheet pan. Place your thumb directly over the cookie and press down in the center to make a well. The dough at the bottom of the thumbprint should be 1/4 inch thick. Depending on the size of your thumb, put 1/2 - 1 teaspoon of jam in each well. (The jam will expand so be careful not to overfill)
- Bake at 325 degrees until golden. Allow to cool then serve.
