Ingredients

1 cup unsalted butter
3/4 cup sugar
2 teaspoons vanilla extract
1 teaspoon almond extract
2-1/2 cups AP flour
1-ounce jam

 
 


Preparation

  1. Cream the butter in the mixer until light and fluffy.
  2. Add all the remaining ingredients except for the jam and mix until a soft dough pulls together. Scrap the bowl several times during this process. It will seem dry in the beginning. Give it time to come together.
  3. Wrap the dough in plastic wrap then refrigerate for 1 hour.
  4. Section the dough and roll into 3/4 inch balls. Place the balls on aluminum foil, which is on a sheet pan. Place your thumb directly over the cookie and press down in the center to make a well. The dough at the bottom of the thumbprint should be 1/4 inch thick. Depending on the size of your thumb, put 1/2 - 1 teaspoon of jam in each well. (The jam will expand so be careful not to overfill)
  5. Bake at 325 degrees until golden. Allow to cool then serve.
