Sweet Potato Vinaigrette Recipe

This is a great vinaigrette for Fall. Try it on a salad with some toasted nuts and blue cheese.
Ingredients
By Measure
2 Garlic Cloves3 Tbs Chopped Shallots or Onion
2 Tbs Honey
1/2 Cup Cider Vinegar
1/2 Cup Brown Sugar
1/2 Cup Oil
2 Cups Cooked and Mashed Sweet Potatoes
Salt and Pepper To Taste
Preparation
- In a blender add the garlic, shallots, honey and vinegar and blend until pureed
- Add the brown sugar and blend until incorporated
- Add the oil slowly until incorporated
- Add the sweet potatoes and blend well
- Season with salt and pepper to taste
- NOTE: This vinaigrette may be thick. Adjust consistency by adding water.
- NOTE: Should be a balance of sweet and tangy but adjust the brown sugar and/or honey to the sweetness you like
