Sweet Potato Vinaigrette Recipe

This is a great vinaigrette for Fall. Try it on a salad with some toasted nuts and blue cheese.


 
 



Ingredients
By Measure
2 Garlic Cloves
3 Tbs Chopped Shallots or Onion
2 Tbs Honey
1/2 Cup Cider Vinegar
1/2 Cup Brown Sugar
1/2 Cup Oil
2 Cups Cooked and Mashed Sweet Potatoes
Salt and Pepper To Taste

 
 


Preparation

  1. In a blender add the garlic, shallots, honey and vinegar and blend until pureed
  2. Add the brown sugar and blend until incorporated
  3. Add the oil slowly until incorporated
  4. Add the sweet potatoes and blend well
  5. Season with salt and pepper to taste
  6. NOTE: This vinaigrette may be thick. Adjust consistency by adding water.
  7. NOTE: Should be a balance of sweet and tangy but adjust the brown sugar and/or honey to the sweetness you like
