Feel like cooking outdoors? Steamed crabs are fun and easy to cook. Nothing looks better on a picnic table served with fresh sweet corn, tomatoes and new red potatoes.



Ingredients
By Measure
For The Steaming:

12 Blue Crabs (Size: jumbos or whales)
3 cups water
3 cups cider vinegar

For The Spice Mix:

4 tablespoons ground yellow mustard
3 tablespoons ground coriander seeds
2 tablespoons ground whole allspice
2 tablespoons ground dill seed
1 tablespoon ground cloves
1 tablespoon crushed red pepper
8 bay leaves
1 tablespoon cayenne pepper or to taste
salt to taste
 


Preparation

    For The Spice Mix:
  1. Combine the spice mixture ingredients. Mix well to blend the flavors.
    For Steaming The Crabs:
  1. You will need a large pot with a raised rack to keep the crabs out of the water mixture. Add the water and vinegar to the pot and bring to a boil. The depth of the water mixture could vary due to pot size. While boiling watch the level of water in your pot making sure not to boil dry. If you run low remember its equal parts water to vinegar.
  2. Carefully layer the crabs in the pot. Between each layer of crabs season with the spice mixture you have made. If you don't want to make your own spice blend, simply purchase a crab boil seasoning available at many grocery stores.
  3. Steam blue crabs for 30 minutes until done.
  4. Allow to rest until the crabs have cooled and are safe to crack and enjoy.
