Sausage and Cornbread Dressing Recipe
I love dressing. Or do I love stuffing? I know I love this recipe though.

A great accompaniment to your Thanksgiving bird.
Ingredients
By Measure
1 Tbs Oil Or Bacon Fat1# Sage Flavored Sausage
1/2 Cup Small Diced Celery
1/2 Cup Small Diced Onion
1/4 Cup Butter
3 Cups Crumbled Cornbread
3 Cups Crumbled Biscuits
1 tsp Fresh Chopped Sage
1 tsp Fresh Chopped Thyme
2 tsp Fresh Chopped Parsley
2.5 Cups Chicken Or Turkey Stock
Salt & Pepper To Taste
Preparation
- In a saute pan over high heat bring the oil or bacon fat to the smoke point then add the sausage
- Let the sausage caramelize while breaking it into smaller pieces as it cooks
- When the sausage is about 75% cooked add the celery and onions and cook until sausage is cooked through
- Add the butter and stir until melted
- In a large bowl add the cornbread, biscuits, sage, thyme and parsley
- Add the sausage mixture to the bread mixture and stir until blended
- Add the stock and season with salt and pepper
- Place in a casserole dish and bake at 375 degrees until heated through and top is brown and crunchy (about 30-45 minutes)
- NOTE: If dressing seems too dry then add a little more stock before baking. It should be very moist.
