Ingredients
For The Toast:
4 Pieces Texas Toast, Brushed with Melted Butter
1 ¼ Cups Sour Cream
4 Sausage Patties, Cooked and Diced
½ Cup Cheddar Cheese, Shredded
¼ Cup Parmesan Cheese, Shredded
2 Tbs Basil, Chopped
2 Tbs Chives, Chopped
Salt and Pepper, To Taste
For The Sauce:
2 Tbs Onion, Diced
1 Cup Heavy Cream
2 Tbs Ketchup
2 tsp Tarragon, Chopped
2 tsp Parsley, Chopped
Zest of ½ a Lemon
Dash of Tabasco®
Salt and Pepper, To Taste
Preparation
For The Toast:
- Combine all ingredients, except the bread.
- Divide the mixture into 4 then spread onto bread
- Bake at 400 degrees until edges are toasty
For The Sauce:
- Saute the onions over medium heat until translucent
- Add the cream and ketchup and simmer until thickened to sauce consistency
- Turn off the heat and add the tarragon, parsley, lemon zest and Tabasco®
- Season with salt and pepper
Top the toast with a poached or fried egg. Sauce and serve.
