A versatile dough that is great for Greek gyros, Indian curries or even as a pizza crust.
Ingredients
By Measure
4 1/2 Cups Bread Flour
2 Tbs Sugar
2 Tbs Salt
1 tsp Instant Yeast
2 tsp Minced Garlic
1/2 Stick Butter - Melted
1 Egg
3 Tbs Milk
Water - As Needed

By Weight
1# 5 ounces Bread Flour1 1/2 ounces Sugar
.6 ounces Salt
.2 ounces Instant Yeast
2 tsp Minced Garlic
2 ounces Butter - Melted
1 Egg
3 Tbs Milk
Water - As Needed
Preparation
- In a mixer fitted with a dough hook mix together the flour, sugar, salt, yeast and garlic
- Add the milk, melted butter and eggs and mix until combined
- Add enough water to form a dough - the dough should just stick to the very bottom of the bowl
- Knead until you can stretch a small piece without tearing
- Allow to rise until doubled in size then punch it down
- At this point you can refrigerate overnight if you'd like just be sure to let the dough come to room temperature before continuing to the next step
- Scale into 3 ounce portions
- Cover and let rise until double in size
- Stretch into a round shape, brush with olive oil or butter, season with salt and pepper then bake at 400 degrees until brown, about 8-12 minutes.
