Naan (Flatbread) Recipe

A versatile dough that is great for Greek gyros, Indian curries or even as a pizza crust.      



Ingredients
By Measure
4 1/2 Cups Bread Flour
2 Tbs Sugar
2 Tbs Salt
1 tsp Instant Yeast
2 tsp Minced Garlic
1/2 Stick Butter - Melted
1 Egg
3 Tbs Milk
Water - As Needed
 
By Weight
1# 5 ounces Bread Flour
1 1/2 ounces Sugar
.6 ounces Salt
.2 ounces Instant Yeast
2 tsp Minced Garlic
2 ounces Butter - Melted
1 Egg
3 Tbs Milk
Water - As Needed
 


Preparation

  1. In a mixer fitted with a dough hook mix together the flour, sugar, salt, yeast and garlic
  2. Add the milk, melted butter and eggs and mix until combined
  3. Add enough water to form a dough - the dough should just stick to the very bottom of the bowl
  4. Knead until you can stretch a small piece without tearing
  5. Allow to rise until doubled in size then punch it down
  6. At this point you can refrigerate overnight if you'd like just be sure to let the dough come to room temperature before continuing to the next step
  7. Scale into 3 ounce portions
  8. Cover and let rise until double in size
  9. Stretch into a round shape, brush with olive oil or butter, season with salt and pepper then bake at 400 degrees until brown, about 8-12 minutes.
