Mashed Potato Cakes Recipe

Ingredients

4 cups cold mashed potatoes1 lemon
1/2 cup AP flour
3 tablespoon vegetable oil
salt and pepper
Preparation
- Form the mashed potatoes into 8 equal sized cakes. Dredge each cake into the flour giving them a light dusting. This protects the potato while cooking.
- Add the vegetable oil to a medium hot skillet. Wait for the oil to get hot then gently add the mashed potato cakes to the skillet. Cook for 3-4 minutes on each side. Do not move the cakes while cooking. We want them to brown, which will help the cakes from sticking. This might be a good place for a well-seasoned cast iron skillet. Finish with a squeeze of lemon and a little salt and pepper if necessary.
