Ingredients
By Measure
2 Cups Chopped Shallots or Red Onions8 Birds Eye (Thai) Chilies
1 Red Bell Pepper, Chopped
5 Cloves Garlic
3-inch Piece of Lemon Grass, Chopped
3 tsp Cayenne
2 Tbs Tamarind Paste
2 tsp Turmeric
3 Tbs Sugar
1/2 Lime
Salt To Taste
Preparation
- In a food processor add the shallots, chilies, bell pepper, garlic, lemon grass and cayenne and process into a paste
- Add two tablespoons of oil to a sauté pan over medium-low heat and cook paste for 15 minutes stirring often
- Add tamarind paste, turmeric and sugar and cook for 5 minutes more
- Turn off heat, add juice from the lime and season with salt
- NOTES: Sambal is HOT. It should make you sweat when you eat it. Adjust the cayenne and chilies to your liking. I like to add some to mayonnaise to make a spicy aioli. Great with pork on a taco. This is a great condiment to rice or meats.
