Lobster Rolls Recipe
Sitting on a pier on the Gulf of Maine in Portland, Maine we had our first lobster roll. How can you duplicate that?

Our spin on a New England classic.
Ingredients
By Measure
Meat From 4 Medium Lobsters - Cooked1/3 Cup Mayonnaise
1/4 Cup Sour Cream
1/4 Cup Finely Chopped Celery
3 Tbs Chopped Scallions
3 Tbs Chopped Yellow Onion
1 tsp Dijon Mustard
Juice from 1/2 a Lime
1/2 tsp Sambal or Hot Sauce
Salt and Pepper To Taste
4 Toasted and Buttered Buns
Preparation
- Mix everything but the lobster meat together in a bowl and season with salt and pepper
- Gently fold in the lobster and taste again
- Add to your toasted rolls and enjoy
- You can garnish with red and green onion or a little chiffonade of iceberg lettuce
