Serve this as the base for a curry or make them smaller and top with sour cream as a canape.

Like a potato cake but not exactly.



Ingredients
By Measure
2 Medium-Large Potatoes
1 1/2 Cups Lentils
4 Tbs Sour Cream
4 Tbs Parmesan
2 Eggs
2 Egg Yolks
4 Tbs Flour
1 tsp Garlic - Minced
1 Cup Chives - Chopped
Salt and Pepper - To Taste
Oil for sauteing
 


Preparation

  1. Bake or microwave the potatoes until cooked through and let cool
  2. Shred the potato, skin and all
  3. Cook the lentils in enough water to cover until cooked through, even slightly overcooked is fine for this recipe
  4. Drain the lentils
  5. Combine all the ingredients except the oil in a bowl, season with salt and pepper and mix until well incorporated
  6. Heat a skillet over medium heat until hot then add enough oil to coat the bottom
  7. Scoop the lentil mixture into desired size and cook like pancakes until they are browned on both sides
  8. Season with salt and pepper
  9. Makes about 8-10 cakes
