Lentil Cakes Recipe
Serve this as the base for a curry or make them smaller and top with sour cream as a canape.

Like a potato cake but not exactly.
Ingredients
By Measure
2 Medium-Large Potatoes1 1/2 Cups Lentils
4 Tbs Sour Cream
4 Tbs Parmesan
2 Eggs
2 Egg Yolks
4 Tbs Flour
1 tsp Garlic - Minced
1 Cup Chives - Chopped
Salt and Pepper - To Taste
Oil for sauteing
Preparation
- Bake or microwave the potatoes until cooked through and let cool
- Shred the potato, skin and all
- Cook the lentils in enough water to cover until cooked through, even slightly overcooked is fine for this recipe
- Drain the lentils
- Combine all the ingredients except the oil in a bowl, season with salt and pepper and mix until well incorporated
- Heat a skillet over medium heat until hot then add enough oil to coat the bottom
- Scoop the lentil mixture into desired size and cook like pancakes until they are browned on both sides
- Season with salt and pepper
- Makes about 8-10 cakes
